Booooooo it’s back to school time for the kids. New pencil cases, blazers that are slightly too long and awkward conversations with other parents outside the gates: where did the summer go?
But let’s cheer up and give our little ones a boost in their educational pursuits. Let’s give them fish.
Yep, eating fish just once a week could turn your child into an Einstein of the classroom. A recent study by US scientists confirmed that one seafood meal per week could lead to a higher IQ and even better sleep.
That’s because of the magical omega-3s that fish give you in abundance. Not only will you enjoy a great tasting meal but you’ll be raising a child who’s probably going to win a Nobel Prize and pay for your early retirement.
So, as they head back to school why not try this back to basics fish recipe? Herb Crusted Salmon with a Courgette, Carrot and Avocado Salad.
You will need:
○ 1 Herb Crusted Salmon Fillet with Lemon Butter Sauce, from The Saucy Fish Co.
○ 1 courgette
○ Half an avocado
○ 1 large carrot
○ A handful of pine nuts
○ 4 tbsp. olive oil
○ 1 lemon wedge, for squeezing
What you need to do:
Step 1: Pre Heat your oven to 375°F and place your Herb crusted Salmon filet in the oven for 25 minutes.
Step 2: Peel your carrot then discard the outer layer. Next, use a vegetable peeler or a spiralizer to cut your courgette and carrot into thin strips.
Step 3: Dice your avocado half into small squares and combine with your thin strips of carrot and courgette. Drizzle oil over the top of all, and then add your pine nuts.
Step 4: Once your salmon is cooked though, plate it up with your salad and squeeze the lemon juice over all.
Step 5: To heat you Lemon Butter sauce, place the sachet in a pan of boiling water for 4 minutes and shake well before serving. Pour the sauce over the salmon fillet and enjoy.
