Just because summer is over, doesn’t mean the we have to give up the scared ritual of brunching. We can still bring in the darker days with a delicious and filling morning meal.
(Brunch > most other things)
#thesaucychef. To serve 2, you will need:
○ 2 x Salmon with Chili, Lime and Ginger Dressing fillets
○ 1 oz Spinach
○ 1 white onion
○ 1 green Cchili deseeded
○ ½ oz of cilantro
○ 15 cherry tomatoes
○ Juice and zest of 1 lime
○ Tbsp Olive oil
Finely dice onion and chili, mix with finely chopped coriander and sliced cherry tomatoes to make the salsa for the wrap. Season with a pinch of salt and a tablespoon of olive oil. Add lime zest. Flake the two salmon fillets into a medium sized bowl. Mix in sachet of Chili, Lime and Ginger dressing. Finely slice fresh spinach and place a small handful of it on the wrap. Place salmon mix on top of spinach following the same line, spoon over a generous amount of salsa and roll into a tasty wrap.
