FOOD FOR TONIGHT... LITERALLY

What do we need to eat to keep our mind fit and heathy? Salmon... it’s actually a no brainer.

Here’s why...

Our brains are rather fat and that’s a good thing! 60% of the brain is made up of fatty acids, and these fatty acids come in many different varieties.

Despite there being many variations, our brains have a clear favorite, omega 3 fatty acids and - you guessed it - our old friend salmon is brimming with them.

This essential fatty acid protects neurons from injury, reduces cerebral inflammation and helps produce the neurotransmitters that tell cells what to do. So basically, more salmon = a better, brighter brain.

So let’s put all that omega 3 goodness into a simple recipe. Salmon with Lemon Butter Sauce and Garlic Kale.

You will need:

○ 12 ounces of rice
○ 4 Herb Crusted Atlantic Salmon Crusted fillets with Lemon Butter Sauce
○ 2 cloves garlic, thinly sliced
○ 2 bunches of Kale, chopped
○ Lemon wedges, for serving
○ Salt and pepper, for seasoning

What you need to do:

STEP 1: In a small saucepan, combine rice, water and a pinch of salt. Bring to a boil, then simmer and cover for 20 mins. Remove from the heat and steam with lid for 5 minutes more. Fluff.

STEP 2: Preheat oven 375F and cook your salmon for 24 mins.

STEP 3: In a large skillet heat remaining 2 tablespoons of olive oil. Cook garlic for 2 minutes. Add kale and cook for 4 minutes, until it starts to wilt. Season with salt and pepper.

STEP 4: Heat your Lemon Butter sauce in a mug of boiling water for 4 minutes, then pour over the salmon. Serve salmon with kale, rice, and lemon.
