HERE COMES THE SUN - SPRING RECIPE

The nights are getting lighter, the days are getting warmer and the birds are getting friskier. That must mean Spring is almost here.

Whilst some of you may be fans of cold and ice, at Saucy we love this time of the year when nature wakes up and we can start thinking of leaving the house without five layers of clothes.

Springtime also means a change in our eating habits. Big stews and hearty meat dishes lose their appeal and we want something that’s a bit brighter and more refreshing. Fish can adapt to all weathers and is the ideal meal for the change in seasons.

Say hello to the sun, give a wave to the flowers and try out a recipe that’s perfect for the first day of Spring.

Spring salmon

Ingredients: Serves 2

○ 2 x Saucy Herb Crusted Salmon fillets with Lemon Butter Sauce
○ 14oz of new potatoes
○ Olive oil
○ 8 trimmed asparagus spears, trimmed and halved
○ Cherry tomatoes
○ 1 tbsp balsamic vinegar
○ Basil leaves

Instructions:

Heat oven to 400°F. Roast potatoes and of olive oil for 20 mins until it starts to brown. Add asparagus and leave in oven 15 mins. Next add tomatoes and the lovely salmon with a bit more oil. Cook for another 28 minutes, until cooked through. Add basil leaves then serve.
