When the days get longer and the night’s get warmer, there’s nothing better than sharing a relaxed evening in with friends. You know the drill, it’s been a long day and all you want to do is chill out with a cold drink and good company. But who’s going to cook?!
No need for dinner party dread – Saucy’s got you covered with this fresh twist on fish tacos. Great to serve as a sharing board for everyone to help themselves!
What you will need (serves 2, but easily doubled, tripled, or quadrupled based on how many you’re entertaining!):
○ 2 Herb Crusted Salmon fillets with Lemon Butter Sauce
○ 4 soft flour tacos
○ 1 ripe avocado, stoned, peeled, and diced
○ Half a red onion, finely diced
○ 1 large tomato, deseeded and finely chopped
○ 1 lime: half juiced, half cut into wedges
○ Small bunch of cilantro, chopped
STEP 1: Preheat the oven to 375°F, and put your herb-crusted salmon in the oven for 24 minutes.
STEP 2: Whilst the salmon is cooking, make a fresh avocado salsa by combining the avocados, red onion, and tomatoes. Add the lime juice, cilantro, and season with salt and pepper to taste.
STEP 3: Warm the tacos in the oven for the last 3-4 minutes of the salmon’s cooking time. Serve flakes of fish, spoonful’s of salsa, a drizzle of lemon butter sauce, and a twist of lime in each taco shell.
