HAPPY EASTER from the whole of Team Saucy! Now step away from those chocolate eggs as you’ve got bigger fish to fry.
As fish is a staple in a Good Friday meal, we’d recommend placing our Saucy salmon fillets into a fab fish pie and celebrating the holiday Saucy style… with a nutritious and delicious feast.
What You Need: Serves 4
○ 4 Steamed Salmon fillets with Lime and Cilantro Sauce
○ 35 Oz’s of new potatoes, peeled and cut into halves
○ Tbsp. of milk
○ 2 ounce’s of butter
○ 3 ounce’s of flour
○ 4 spring onions
○ 1.5 cups of milk, plus an extra drop for the mash
○ 2 Tablespoons of cream cheese
○ 1 leek
○ Handful of grated cheese, we recommend cheddar
○ Handful of frozen peas
○ Olive oil
How You Make It:
STEP 1: Preheat the oven to 400°F and place your potatoes in a pan of boiling water, cooking them until they are tender and can be pierced with a knife. Once cooked, drain and mash the potatoes adding a drop of milk, 1 ounce of butter and the cream cheese.
STEP 2: Meanwhile, place 1 oz of butter, the flour, spring onions and leek into another pan and heat gently. Whisk in the 1.5 cups of milk slowly, then bring everything to the boil, cooking for 3 – 4 minutes or until the mixture has thickened, continuing to stir so nothing sticks the bottom of the pan.
STEP 3: Remove from the heat and stir in the cheese, fish and peas, mixing all together well. Transfer everything into an ovenproof dish.
STEP 4: Spoon the potato atop of the mixture and pop in the oven for 20 - 25 minutes… and hey presto, Easter dinner for is done.
