Salmon Cakes

Last month proved a rather exciting one for The Saucy Fish Co. as we worked with our very first US blogger.

As a Saucy favorite on the blogging scene, we asked The Kittchen to create a simple salmon recipe to showcase our superb fillets… and oh what a recipe she came up with. She used our RTE Steamed Saucy Fish Salmon Fillets, with Lime & Cilantro Sauce to create some lip-smacking salmon cakes. *Wipes drool from mouth*

Want to try these for yourself? Of course you do. You will need:

○ One packet of The Saucy Fish Co.’s Steamed Salmon Fillets, with Lime & Cilantro Sauce
○ 2 Large Eggs
○ Tbsp. of milk
○ ⅔ cup Plain Breadcrumbs (or Panko)
○ 2 tablespoons Chopped Red Onion
○ tablespoon Mayonnaise
○ Wedge of Lemon
○ 1 tablespoon Olive Oils

What you need to do:

Remove the salmon from the packaging and use your hands to separate the salmon from the skin. Next, break the salmon meat up into flaky pieces and place in a bowl. Remove the sauce from the packaging and set aside.

Crack the eggs into the bowl and add the breadcrumbs, onion, and mayonnaise. Squeeze the lemon juice into the bowl. Mix the ingredients together thoroughly.

Heat the olive oil in a skillet over medium heat.

Scoop up ¼ cup of the salmon mixture and form it into a small patty. Continue forming 6 patties. Add them to the skillet and cook each side for about 3 minutes, until golden brown.

Place the salmon cakes on a platter and heat The Saucy Fish Co. sauce in a mug of boiling water for 3 minutes, then drizzle over. Serve immediately after.
