A great recipe for family mealtimes and laid back entertaining as it can be prepared beforehand and baked at the last minute.
WHAT YOU NEED: Serves 2.
1 pack of skinless boneless salmon fillets
½ red chilli, deseeded and finely chopped
1 tomato, sliced
3 tablespoons of basil pesto
How You Make It.
STEP 1: Preheat oven to 190°C/375°F/Gas Mark 5.
STEP 2: Place the fillets in a lightly oiled backing dish. Cover the fillets in the pesto, sprinkle with chilli and layer the sliced tomato on top. This can be prepared in advance and kept in the fridge.
STEP 3: Bake in the oven for 20-25 minutes, until the salmon is cooked through.
