PANCAKES WITH A DIFFERENCE...Posted 4 February 2016 by The Saucy Fish Co.
Celebrate Pancake Day with a fishy twist on February 9th, with these delicious savoury seafood pancakes.
○ For the Pancakes: (serves 4)
○ 4oz plain flour
○ Pinch of salt
○ 1 egg
○ 1 cup milk
○ 1tsp melted butter
For the Filling:
○ x2 The Saucy Fish Co. Salmon with Rocket and Crème Fraiche
○ 4oz King Prawns
○ 1tbsp Fresh dill
Step 1: Sieve the flour into a large baking bowl, making a well in the centre of the mix. Add the eggs and beat the mixture until smooth and lump free.
Step 2: Add half the milk and a tsp of butter and beat well followed by adding the remaining milk and stir well.
Step 3: Lightly grease a medium sized frying pan, once hot, add a ladle of batter spreading evenly across the pan. Leave to cook until golden and flip to cook on both sides. Place cooked pancakes to one side.
Step 1: Place The Saucy Fish Co. salmon fillets in the oven for 12-15 minutes to cook.
Step 2: Bring a saucepan of lightly salted water to the boil and add the prawns for 3-6 minutes over a medium heat.
Step 3: Once cooked, remove the salmon from the oven and flake into a bowl along with the prawns and leave to one side.
Step 4: For each pancake, place a quarter of the mixture into the centre folding one edge into the middle of the pancake and roll into a thick sausage shape. Repeat with the remaining 3 pancakes.
Step 5: Place the Saucy Fish Co. sachets in a mug of boiling water for 3 minutes each to heat through.
Step 6: Before serving, drizzle the rocket and crèm fraiche dressing over the pancakes and garnish with a small sprig of dill.
